Abstract

Bhoondi, godhi huggi, jeelebi, rava laddu, sajka or sanja, shev laddu, and shira are the food items which are covered in this chapter. Bhoondi is a Rajasthani snack food made from sweetened, fried Bengal gram flour in bubble form which are soaked in sugar syrup. Godhi huggi is pudding prepared using broken wheat and jaggery as main ingredients. It is served with milk or ghee. Jeelebi is a traditional deep fried sweet dish consumed all over India. It is prepared by using refined wheat flour as main ingredient. Rava laddu is prepared using semolina, ghee and sugar as main ingredients. Shev laddu is made by using shev (prepared from Bengal gram flour) and jaggery as main ingredient. Shira is a sweet dish commonly served as a breakfast item. Fruits such as bananas and pineapple are added to improve the flavor of shira. Nutritional compositions of these recipes are also given in this chapter.
