Generic Recipes of Rural North Karnataka with Nutrient Values

Women First: Preconception maternal nutrition—a multi-site randomized controlled trial is being implemented in four research sites, which are Guatemala, India, Pakistan, and Democratic Republic of the Congo. The objective of this trial is to determine the benefits to the offspring of women in poor, food-insecure environments of commencing a daily comprehensive maternal nutrition supplement ≥ 3 months prior to conception versus the benefits of commencing the same supplement at 12-14 weeks gestation and also to compare offspring outcomes with those of a third trial arm who receive no supplement. Women’s and Children’s Health Research Unit of KLE Academy of Higher Education and Research’s J N Medical College is one of the GN sites and this study is being conducted in 10 Primary Health Centre areas of Belgaum district situated in North Karnataka. As part of this trial, Dietary assessment was conducted in women after pregnancy is confirmed. Two multiple-pass 24-hour dietary recalls (2-4 weeks apart) were collected from every other participant in two intervention arms prior to 12-week gestation. This book “Generic Recipes of Rural North Karnataka with Nutrient Values” presents in-detail the method of preparation and collection of generic recipes for mixed dishes and beverages, compiling of local food composition table, and conversion of raw nutrient data to cook. This book has total of 114 generic recipes of Southern Maharashtra and North Karnataka region with ingredients adjusted per 100 g and macro and micronutrients. Additionally, the standard portion sizes of recipes are also covered in this book.
