Abstract

Obesity and malnutrition are both emerging global epidemics: first one in the developed and developing countries and the second one in the underdeveloped countries. Both obesity and under nutrition are associated with a number of diseases including cancers. BMI is an essential tool to assess obesity and under nutrition. Protein-calorie malnutrition leads to two different diseases: Kwashiorkor and Marasmas. Different vitamins and trace element deficiencies lead to different types of diseases ranging from night blindness, rickets, diarrhea, angular stomatitis, pellagra, beriberi and impaired wound healing, etc. This chapter describes is short the important factors associated with obesity, malnutrition, sources of different vitamins and trace elements and their deficiency states.
